Ingredients

500g sourdough pizza mix

340ml warm water

2 tbsp Za’atar

50ml Extra Virgin Olive Oil

Handful of pine nuts

6-8 washed wild garlic leaves

6 tbsp ricotta

20g Parmesan cheese

2 tbsp lemon juice

Handful of rocket leaves

Instructions

1. Prepare the Dough:

Start by mixing the warm water with the sourdough pizza mix in a large bowl. Add a splash of olive oil and knead the dough for about 10-15 minutes until it becomes firm and elastic. This will ensure that your dough has a lovely texture when baked.

2. Let the Dough Rise:

Place the kneaded dough in an oiled bowl and cover it with a damp cloth. Let it rise for about an hour, or until it has doubled in size. This is the time for the dough to develop its flavour and light texture.

3. Make the Wild Garlic Pesto:

While the dough is rising, prepare the wild garlic pesto. Blend together the wild garlic, pine nuts, olive oil, rocket leaves, and lemon juice. This fragrant pesto will form the base of your flatbread, adding a burst of herby goodness to every bite.

4. Shape the Flatbread:

Once the dough has risen, flatten it out on a clean surface. Spread the wild garlic pesto evenly over the surface of the dough, covering it generously.

5. Bake the Flatbread:

Preheat your oven to 230°C (450°F). Place the flatbread on a preheated tray or pizza stone and bake for around 10 minutes, or until it’s golden and crispy. The flatbread should have a nice, crisp base with a soft, airy texture inside.

6. Finish with Toppings:

Once the flatbread is baked, remove it from the oven and finish it off with a generous sprinkle of Za’atar, fresh rocket leaves, and dollops of creamy ricotta. The ricotta will melt slightly, giving the flatbread a rich, creamy finish.

7. Serve and Enjoy:

Cut the flatbread into slices and serve while warm, either as a side dish, appetizer, or snack. Enjoy the combination of the crispy base, the vibrant wild garlic pesto, and the creamy ricotta!
