Creamy Garlic Mussels: A Simple, Flavourful Dish
Fresh mussels, gently steamed with garlic, onion, and a touch of cream, make for a rich yet delicate dish. Ingredients:
1kg Fresh Mussels
30g Sea Salt
1 Small Onion
2 Cloves Garlic
50ml Double Cream
20g Butter
10ml Rice Vinegar
Method:
1) Rinse the Mussels once in cold water. Drain and place in a basin with cold water, removing any mussels that are open and/or float to the top.
2) Use a knife to pull the ‘beard’ off the mussel and scrape off any barnacles. Rinse again and place into a bowl with cold water and 20g salt. Allow to sit for 20-30 minutes, pouring out any sediment which is purged from the mussels.
3) Finely chop the onion and thinly slice the garlic. Fry in a saucepan on a low heat in olive oil and butter. Add in the Mussels, stir and deglaze with vinegar.
4) Cover the pan and cook on a medium/low heat for 1-2 minutes or until the Mussels have opened. Add in double cream and cover for 30 seconds.
5) Serve with bread or fries, allowing the liquid to soak in to infuse flavour.
