Ingredients

12 large olives

100g ricotta

2 tbsp Za’atar

100g plain flour

1 egg

100g panko breadcrumbs

1L vegetable oil (for frying)

Instructions

1. Prepare the Ricotta Filling:

Start by mixing the ricotta with Za’atar in a bowl. Once mixed, transfer the ricotta mixture into a piping bag.

2. Fill the Olives:

Carefully pipe the ricotta mixture into the large olives until they are completely filled. Be sure to fill them all the way to ensure a deliciously creamy centre.

3. Prepare the Batter:

In a separate bowl, combine the plain flour, egg, and enough water to form a thick batter. This batter will help the breadcrumbs adhere to the olives, giving them that perfect crispy coating.

4. Coat the Olives:

Take each stuffed olive and dip it into the batter, making sure it is evenly coated. After coating in the batter, roll the olives in the panko breadcrumbs, ensuring they are completely covered. For an extra crunchy coating, dip the olives back into the batter, then back into the breadcrumbs, rolling them between your hands to ensure an even coat.

5. Fry the Olives:

Heat the vegetable oil in a large pan. Once the oil is hot, carefully fry the olives until golden brown and crispy on all sides. Be sure to turn them gently to avoid any damage to the coating.

6. Serve and Enjoy:

Once the olives are golden brown and crispy, remove them from the oil and drain on paper towels. Serve hot and enjoy the wonderful combination of flavours and textures!
